I know, I know I have been rather lax this last few weeks in posting. Christmas preperations are finally catching up with me and I still haven't wrapped a single present!
I have been making some simple treats for guests though and these cookie pops have been a hit.
They are super simple and easy to do and can be whipped up in less than an hour, you can make as many or as few as you like.
For this particular recipe I used a packet of chocolate chip cookies but you could use anything you fancy really. Add the cookies to a mixer and blend until a fine crumb, add in some cream cheese (add in a little at a time) until it becomes a smooth paste.
Take about a teaspoon of the mix and roll into a ball, place on some greaseproof paper on a baking tray and repeat using up all of the mixture.
You then need to melt your chocolate or if you can find in a local baking suppies shop candy melts, I find candy melts better because they can be reheated and you don't have to worry about it burning in the microwave.
Dip your cake pop stick into the chocolate to get about 1cm worth of choc on the end and then place into the top of your cookie mix ball, repeat this with all of the balls and then place into the fridge to cool.
Once they have hardened you can start to cover them in the chocolate, dip in the chocolate and then turn round until fully coated. Gently tap on the side of the bowl until the excess has dropped off add sprinkles if desired, then stand up to dry.
If you have some polystyrene then you can use this to stand them up in, otherwise a cup or glass can be used. And then you are done, the perfect size for children and pretty enough to give as a gift.

Food glorious food!
So my posts have been mainly Christmas related this week, sorry but you know how it is.
I've been doing a lot of baking and making, here are just a few of my festive offerings.
Me and my son made some Christmas cupcakes on Christmas eve for visiting relatives, he seems just to want them to eat the sweet off the top though!
I hadn't made these before but it seemed cheaper to make some tarts than buy them, they were delicious and surprisingly easy. I have never used Filo before but had a stab and they worked out well. Will put the recipe or at least how I did them on the blog at some point.
For the last few years I have bought reduced turkeys after Christmas just to make this dish it is devine, even my three year old loved it! Turkey is so versatile, you can have a roast dinner, and do so much with the left overs. This is from one of my favourite chef's the fabulous Jamie Oliver, it is Chilli Con Turkey and you can use up so much with it :)
And finally, fudge! As seen on Favourite Recipe Friday! I was giving to children so left out the pistachios but instead added some cranberries on the top for a festive look.

I love to bake!
I love to bake, I am by no means a pro I just enjoy making cakes and usually eating them.
My latest successes have been cake pops and learning to ice a cupcake after attending a demo by the lovely Liana at Star Bakery.
This blog was originally going to be named cupcakes and hot chocolate as there is nothing more than I love on a hot, cold or for that matter any day than a mug of hot chocolate and a piece of cake.
In fact I might add a page at the top of my baking triumphs and maybe if I am not feeling totally deflated some of the not so successful attempts, I once made a lemon drizzle cake that fell in and a coffee cake that resembled two sheets of card as they didn't rise.
But I don't let it put me off and usually figure out what I did wrong and can correct next time, fortunately my family will eat it no matter how it looks and I now know that if my cake doesn't rise I can turn it into cake pops instead....win-win really ;)
